ISOMALT fulfils all requirements for the production of premium dragées, its solubility ideal for achieving good sweetness power and flavour release. Low process temperatures (45-55 °C) allow a gentle and cost-effective way to coat temperature-sensitive centres, e.g., in functional ingredients, thereby giving the coating a pleasing surface. Because ISOMALT absorbs virtually no moisture, the coating retains an outstanding crunch over the resulting extended shelf life of the product.
Dragées with any kind of filling may be produced with ISOMALT, and different coating processes applied according to specific requirements.
